Miniature Corn Muffins

Super easy, miniature corn muffins from scratch. I use Silk soymilk (vanilla or plain) instead of milk. |
Ingredients: |

2/3 cup |
|
cornmeal |
|
1 1/4 cups |
|
flour |
|
1/3 cup |
|
sugar |
|
1 Tbsp |
|
baking powder |
|
1/2 tsp |
|
salt |
|
1/3 cup |
|
canola oil |
|
1 cup |
|
milk or soymilk |
Directions: |
|
Mix the cornmeal, flour, sugar, baking powder and salt in a bowl. Add the oil and milk and mix just until moistened.
Spoon into miniature muffin cups sprayed with nonstick cooking spray, filling 1/2 full. Bake at 350 degrees for 13 to 15 minutes or unbtil golden brown.
