Meatloaf Muffins

  Meatloaf muffins
Ingredients:
  1 tsp   olive oil
  1/2 cup   diced carrot
  1 tsp   dried oregano
  2 cloves   garlic, minced
  1 cup   sugar, divided
  1.50 lbs   ground turkey, lean
  1 cup   bread crumbs
  2 T   dijon mustard
  1 tsp   Worchestershire sauce
  1/4 tsp   pepper
  2 lg   eggs
    cooking spray
Directions:
  Preheat oven to 350 degrees

Heat olive oil in a large skillet over medium-heat. Add carot, diced onion and garlic (onion optional) and saute for 2 minutes. Cool. Combine mixture, 1/2 cup ketchup an the remaining ingredients (except cooking spray) in a large bowl. Spoon meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 teaspoons ketchup. Bake at 350 for 25 minutes.
