Soak beans in hot water for at least 1 hour. Pour out water and add new water. Cover the beans well and add ham seasoning. Cook just above simmer until beans are really soft.
If using rice cooker - follow instructions to cook 6 cups dried rice.
If using microwave- 3 cups rice to 6 cups water. Salt to taste. Cook for 30 minutes on high. Repeat for second batch if needed.
