  PATTI'S MAC N CHEESE.
Ingredients:
  2 T   BUTTER
  2 T   FLOUR
  1 C   MILK
  2 #   SHARP CHEESE
  0.50 t   WHITE PEPPER
  1.50 #   ELBOW MACARONI
Directions:
  MELT BUTTER IN LARGE SAUTE PAN, ADD FLOUR AND COOK FOR 2-3 MINUTES BUT DO NOT BROWN. ADD MILK(ANY KIND) AND SIMMER. SLOWLY ADD PIECES OF CHEESE, STIRRING CONSTANTLY WITH RUBBER SPATULA OR WOODEN SPOON. COOK MACARONI AS DIRECTED. DRAIN AND ADD HOT UN-RINSED MACARONI TO CHEESE SAUCE. CAN BE TOPPED WITH A BUTTER/CRACKER MIXTURE OR FRENCH FRIED ONIONS THEN BAKED BUT I USUALLY DON'T AS MY GUYS ARE ALWAYS WAITING FOR IT!
