Luffie's Ceasar Salad

  Homemade Ceasar Dressing whipped up in mins
Ingredients:
  1 large   egg yolk
  1 tbsp   dijon mustard
  1 tbsp   worstershire
  1 tsp   Mrs Dash
  2 tsp   chopped garlic
  1/2 fresh   lemon (zest and juice)
  1 cup   canola (or mild) oil
  1/4 cup   grated parmesan cheese
  1 head   romaine
  1 cup   homemade croutons
Directions:
  Whisk yolk and mustard until colour lightens, add worstershire, Mrs. Dash and garlic. Slowly drizzle in oil, few drops at a time, whisking continually until it starts to emulsify. Continue to stream in oil until all is incorporated. It should thicken (like mayonnaise) if you continue to whisk, the longer the thicker it becomes.

Add zest and juice of 1/2 lemon and cheese. Whisk and leave in bottom of bowl, add romaine and croutons on top - toss together just before serving.

* Vegetarian if you omit the worstershire (has anchovies in it)
