Laura Cambron's Mango Curry Chicken

  I created this recipe when my husband and I were trying to lose weight, and we wanted something different. My entire family loves this recipe and it's only 136 calories per serving.
Ingredients:
  1 lb   skinless, boneless chicken strips
  1 fruit   peeled and diced mango
  1 tsp   curry powder
  1 tsp   saffron
  1 tsp   sea salt
  1/4 cup   lime juice
Directions:
  Place 1 tsp salt in the bottom of a hot skillet. Then place diced mango and lime juice in the skillet and stir together. Place chicken breast pieces on top of mango, and cook on high heat for about 10 minutes. Add remaining ingredients and cook on medium heat another 10 minutes stirring frequently until chicken is cooked through. Serve with stir-fry vegetables and wild rice.
