Lasagna Roll-Ups

  A different twist on the classic Italian dish.
Ingredients:
  1 lb   Ground beef or turkey
  1 26 oz   jar spaghetti sauce
  1   egg
  1 cup   ricotta cheese
  1/2 cup   parmesan cheese, divided
  9   lasagna noodles, cooked,drained
  2 cups   mozzarella cheese, divided
Directions:
  Preheat oven to 350 degrees. Brown meat in a skillet; drain fat.Add 1/2 the spaghetti sauce to the meat. Mix the egg, ricotta, and 1/4 parmesan cheese. Spread each noodle with 2 Tbsp. ricotta mixture, top with 1/4 meat mixture, and 2 Tbsp. mozzarella cheese. Roll up each noodle,starting at the short end. Place each rolled noodle in an 8 inch square baking dish. Pour remaining sauce over the noodles. Sprinle with remaining parmesan and mozzarella. Cover with foil and bake for 45 minutes.Let stand ten minutes and serve.
