Lasagna Roll-Ups

A different twist on the classic Italian dish. |
Ingredients: |

1 lb |
|
Ground beef or turkey |
|
1 26 oz |
|
jar spaghetti sauce |
|
1 |
|
egg |
|
1 cup |
|
ricotta cheese |
|
1/2 cup |
|
parmesan cheese, divided |
|
9 |
|
lasagna noodles, cooked,drained |
|
2 cups |
|
mozzarella cheese, divided |
Directions: |

Preheat oven to 350 degrees. Brown meat in a skillet; drain fat.Add 1/2 the spaghetti sauce to the meat. Mix the egg, ricotta, and 1/4 parmesan cheese. Spread each noodle with 2 Tbsp. ricotta mixture, top with 1/4 meat mixture, and 2 Tbsp. mozzarella cheese. Roll up each noodle,starting at the short end. Place each rolled noodle in an 8 inch square baking dish. Pour remaining sauce over the noodles. Sprinle with remaining parmesan and mozzarella. Cover with foil and bake for 45 minutes.Let stand ten minutes and serve.
