Ingredients: |

Eggs |
|
1/4 cup |
|
Onions, diced |
|
1/2 cup |
|
Mushrooms |
|
1/4 cup |
|
Sweet red peppers, diced |
|
2 TB |
|
mild cheddar cheese |
|
1 tsp |
|
garlic, minced |
|
2 TB |
|
Salsa |
|
1 tsp |
|
chipotle seasoning |
Directions: |

Gather all ingredients.
Chop up your vegetables, place in a microwaveable bowl, add 1/2 tsp chipotle seasoning, spray with Pam Cooking Oil, stir to coat.
Cover bowl, place in microwave for 1 minute.
Place small frying pan on stove to heat.
Scramble 2 eggs.
Pull veggies out of microwave, drain, set beside stove.
Spray pan well with Pam.
Pour eggs in hot pan and push back edges draining liquid egg to sides to cook evenly.
Sprinkle 1/2 tsp chipotle seasoning over eggs.
Flip eggs over, spread cheese over.
Slide out onto a plate and put veggies on half.
Fold over and garnish with salsa.
