by Laurie Duncan
serves: 6
Tuna salad heated wiht cheese for a good winter lunch. Add a cup of hot cocoa and you have it made!
Ingredients:
  2 cans   tuna in water
  1/2 c   mayo
  1/2 sm   onion, chopped
  2 Tbs   dill pickle relish
  12 slices   whole wheat bread
  6 slices   American cheese
Directions:
Drain the tuna. Put into a bowl and mix in the mayo, onion, and pickle relish. You can add more mayo if needed.

Heat oven 425*.

Place 6 pieces of bread on large cookie sheet and top with tuna mixture. Place the other 6 pieces of bread around the edges of the pan balanced so that they will toast as the tuna heats up. About 10 minutes. Take out of oven and place a piece of cheese on top of the tuna of each slice and top that with a piece of the toasted bread. Place back into oven for about 5 minutes to melt the cheese. Remove from oven and serve hot. Be careful with children as the tuna really gets hot and with cheese it can burn the tongue.
