Home-made Refried Beans

  Easy-to make and freeze well for later
Ingredients:
  1 lb   dried pinto beans
  0.50 cup   minced onion
Directions:
  soak beans overnight or rinse and put beans in a pot and cover with 6 inches of water and bring to a boil, then turn off heat and let stand for 1 hour.

rinse soaked beans and place in large pot covered with 6 inches of fresh water and bring to boil. Add onions and turn down heat and simmer beans for 2 hours or until beans are very soft. Drain off water, reserving about 1 cup. Place beans in chicken fryer or large heavy frypan and mash with hand masher while cooking on low heat. Mash until desired consistency.
