Heb Frittata

  one dish meal
Ingredients:
  6   eggs, lightly beaten
  1/2 cup   parmesan, grated
  1/4 t   salt
  1/4 t   pepper
  1 T   olive oil
  1/2   onion, chopped fine
  2 T   Fresh herbs
Directions:
  Pre heat oven to 350* Whisk eggs, parmesan, salt & pepper in bowl. heat oil in oven proof pan over med heat. Add onion and cook till soft. Add parsley and eggs. Stir until eggs are set but still moist ontop. Transfer to oven. bake till top is set.
