Hearts of Palm Salad

Low carb alternative to potato salad |
Ingredients: |

2 14.5 oz cans |
|
Hearts of Palm |
|
2 tsp |
|
Lemon Juice |
|
1 tsp |
|
Mustard |
|
1 tblsp |
|
Extra Virgin Olive Oil |
|
1 clove |
|
Garlic, pressed or minced |
|
2 tblsp |
|
Fresh Herbs, chopped (tarragon or dill are both good choices) |
Directions: |

Slices hearts of palm into uniform bite-sized pieces. Whisk together juice, mustard, oil and garlic. Toss dressing with hearts of palm. Add herbs and toss lightly to distribute.
