Hawaiian Ham over Rice

This is an easy and tasty idea to use up some of that leftover ham. I've also used hickory flavored Spam and it was devoured by my crew as well. |
Ingredients: |

1 1/2 cups |
|
Ham (or Hickory flavored Spam) |
|
1 20 oz. can |
|
Pineapple (chunks) |
|
2 tsp. |
|
Hickory Smoke flavoring |
|
3 cups |
|
Rice (pan-fried with onion, if desired) |
|

Cooking Spray |
Directions: |
|
Place the pineapple chunks in a dish with a flat bottom, or on a plate. Drizzle the hickory flavoring over the pineapple. Set aside for 5 min.
Cut up the ham into 1/2 -3/4 inch cubes.
Stir the pineapple again. Set aside.
Place ham in hot sprayed skillet.
Add pineapple. Brown to your liking.
Serve over rice.
