There's no right or wrong way to do this soup! It's hearty enough to please dad with meat and veggies, but healthy enough to please mom (with modifications). Please note, can also use 1 packet dry Lipton onion soup mix in place of onion. |
Ingredients: |
1 lb |
ground turkey (or beef) |
1 cup |
chopped carrots |
1 cup |
chopped celery |
5 Tbs. |
Garlic Salt |
6 cubes |
beef bullion (or 32 oz. beef broth) |
5 cups |
water (with bullion) |
1 can |
8 oz. tomato sauce |
1 can |
16 oz. diced tomatoes |
1 tsp |
salt (I chose garlic salt) |
1 10 oz. |
frozen corn (we substituted peas instead) |
1 tsp |
dried basil |
3 tbs |
ketchup |
1 cup |
shredded cheese (if desired) |
Directions: |
Brown ground turkey (or HB) in skillet and drain. Combine all ingredients, bring to a boil, reduce heat and simmer for at least 2 hours (or place in crock pot on low for 6 hours). I have also used this same recipe with leftover veggies. I love to play around with different flavors. My kids enjoy putting shredded cheese on before eating and calling it "cheeseburger soup."
