Greek Hamburger Pilaf

brown rice, uncooked |

hamburger |

2 cup |

carrot |

2 cup |
|
celery |

zucchini |

28 oz |

tomatoes |

16 oz |

spinach, chopped |
|
1/2 cup |

parmesan cheese |
Directions: |

Put spinach out to thaw.
Begin cooking rice according to directions.
When rice is about halfway done, brown beef in very large skillet or stew pot with onions and desired seasonings. I use Cavender's Greek Seasoning but original recipe called for garlic salt, pepper, & oregano.
Add carrots and celery, cook until almost done; add zucchini and stir a minute or two longer.
Add tomatoes and spinach, breaking up to mix. Cook until spinach thaws.
Add cooked rice and parmesan; adjust seasonings to taste.
We like it with just a bit more parmesan on top.
