Greek Couscous Salad for a Crowd

Good side dish recipe for grilled chicken or beef. |
Ingredients: |

1 cup |
|
olive oil |
|
3 tsp |
|
minced garlic |
|
2 1/2 tsp |
|
dried oregano |
|
2 tsp |
|
dried basil |
|
1 tsp |
|
seasoned salt |
|
1/2 tsp |
|
onion pwdr |
|
2 tsp |
|
Dijon mustard |
|
5 T |
|
red wine vinegar |
|
1/2 tsp |
|
sugar |
|
3 6 oz pkg |
|
garlic & herb couscous mix |
|
1 cup |
|
sliced black olives |
|
1 pint |
|
cherry tomatoes, sliced |
|
3/4 c |
|
diced red ppr |
|
3/4 c |
|
diced green ppr |
|
1 small |
|
cucumber, diced |
|
1 small |
|
diced onion |
|
1 can |
|
artichoke hearts, chopped up |
|
1/3 c |
|
fresh parsley |

3/4 c |

greek salad dressing |
|
2 c |

crumbled feta cheese |
Directions: |
|
Whisk together ingredients 1-9 and set aside, cover and chill for at least 3 hours or overnight.
For the salad: Cook the couscous according to pkg directions; transfer to a large bowl and cool completely breaking up any lumps with a fork.
When couscous is completely cooled, mix in olives, tomato halves, bell pprs, cucumber, onion, artichokes and parsley; add in 1/2 c of the prepared greek dressing and toss well to combine.
Mix in feta cheese, then season the salad w/salt & ppr
Cover and chill until completely cold.
