GF Mexican Rice

  great dish for GF diets who like Tex Mex
Ingredients:
  1 small   onion
  3 TBSP   butter
  1 cup   long grain rice
  2 TBSP   canned, chopped chillis
  1 cup   very hot water
  1   GF chicken bouillon cube
  1 cup   GF salsa
Directions:
  Peel and cho the onion.
Melt the butter in a medium saucepan over medium heat.
Saute the onion nd rice in the butter, stirring frequently, until rice is golden.
Add chillis, hot water, bouillon cube, stirring until blended.
Cover the pan, and lower the heat.
Let the rice steam for 15-20 minutesor until all liquid is absorbed.
