4 oz light Velveeta Cheese, cubed |

14 oz Low-sodium chicken broth |

Chopped Brocccoli , fresh or frozen |

Chopped Cauliflower, Fresh or Frozen |

1/4 Cup |
|
Finely chopped or grated carrots |

1/4 cup |

Chopped Celery |

Directions: |

Prep time: 20 minutes
Cooking time: 40-45 minutes
1. Heat Canola oil in large saucepan. Stir in onion and saute until just tender
2. Stir in flour until well blended. Slowely add milk over medium heat, stirring constantly until thickened and smooth.
3. Stir in cheese, continuing to stir until cheese melts. Set aside.
4. In a separarte saucepan, simmer broccoli, cauliflower, carrots, and veleery in chicken broth until almost tender.
5. Season with salt, if you wish, and pepper.
6. Pour Cheesy sauce into vegetables and heat through.
Variations:
Instead of chicken broth, use 2 chicken bouillon cubes and 1 3/4 cups water in Step 4
Instead of cauliflower, use 2 additional cups of broccol, fresh or frozen
