Crock Pot Chicken and Rice Casserole

  Crock Pot
Ingredients:
  1 6.2 ou   pack fast cooking wild rice mix
  2 tlb   butter
  1   chopped onion
  2   chopped celery
  3 cups   cooked, chopped chicken
  3 cups   shredded, colby-jack cheese
  1 can   cream of celery soup
  1 8 ou   sour cream
  1/2 cup   milk
  1 cup   crushed, round, buttery crackers
Directions:
  Prepare rice mix according to package directions
Meanwhile melt butter in a large skillet over medium-high heat; add onion and celery. Saute 4 minutes or until tender.
Combine rice, sauteed vegetables, chicken, 2 cups cheese, and the next 5 ingredients; spoon into a lightly greased slow cooker.
Cover and cook on low 4 1/2 hours. Combine remaining 1 cup cheese and cracker crumbs; sprinkle over casserole.
Cover and cook on low 30 more minutes.
