Crock Pot Apricot Glazed Pork Roast

serves: 6
  Sweet and tangy pork roast.
Ingredients:
  4 lb   Boneless pork loin roast
  1 can   Chicken broth
  1 jar   Apricot preserves (18 oz)
  1   Onion, chopped
  2 Tbsp   Dijon mustard
  2 Tbsp   cornstarch
  2 Tbsp   Water
Directions:
  Mix broth, preserves, onion, mustard in a crock pot.
Add pork and turn to coat.
Cook on low for 8-9 hours.
For a thicker sauce, after cooking pork roast, remove from the cooker.
Mix in 2 Tbs cornstarch and 2 Tbs water in to crock pot.
Cook on high for 10 minutes or until the mixture boils and sauce thickens.
