Creamy potato soup with vegetables. |
Ingredients: |

potatoes |
|
4 |
|
carrots |
|
2 stalks |
|
celery |
|
1 |
|
onion |
|
4 oz. |
|
cream cheese |
|
2 tsp. |
|
salt (to taste) |
|
1 pinch |
|
cayenne |
|
2 tsp. |
|
garlic (to taste) |
|
1 can |
|
evaporated milk |
|
1 Tbs. |
|
parsley (optional) |
Directions: |
|
Chop potatoes and put on to boil.
Chop remaining vegetables in food processor, then add to boiling potatoes.
Add seasoning to taste.
Remove from heat and add cream cheese & evaporated milk.
Mash with potato masher.
