Crab Lettuce Wraps

  Spicy, creamy and crunchy deliciousness. Make in advance if you like.
Ingredients:
  2 pkg   imitation crab, flakes or legs
  3   green onions, chopped
  1/2 cup   mayonnaise
  3   roma tomatoes, seeded and diced
  1/2   cucumber, diced (optional, salt, drain and pat dry)
  1/2   lemon, juiced
  1 tbsp   sriracha hot chili sauce, or other hot sauce
  1/2 tsp   salt, or less to taste
  1 head   lettuce, romaine, bibb, or iceberg
Directions:
  Shred the crab with your fingers into a large bowl. Add the scallions, mayonnaise, tomato, lemon juice, and hot sauce. Mix well then taste and adjust the seasoning with salt. Serve in chilled lettuce leaves or with crackers.
