Corn and Bean Salsa

  A yummy salsa that can be used for a nuber of things...
Ingredients:
  1   yellow pepper, seeded and diced
  1 can   organic yellow corn, drained
  1 can   organic black beans, drained
  3   limes, juiced
  1 1/2 TBSP   olive oil
    Fresh cilantro, chopped- use as much as you want
  1/4 tsp   ground cumin
    salt and pepper to taste
    1/2 jalapeno seeded and diced (optional)
Directions:
  mix all ingredients in a medium bowl and serve
