8 tablespoons of olive oil
2 tablespoons & 1 teaspoon minced garlic
2 tablespoons & 1 teaspoon of chopped shallots
1 cup of brown rice
1 cup of chicken stock
1 cup of water
2 pinches of salt
1 teaspoon & 2 pinches of pepper
2- 8 oz boneless skinless chicken breasts
1 bunch of fresh broccoli
2 tablespoon unsalted butter
1. Lightly coat a pan with 3 tablespoons of olive oil, and place over medium heat.
2. Add a teaspoon of garlic and a teaspoon of shallots and simmer for 1 minute
3. Next add the rice and saut� for 2 minutes.
4. Add chicken stock, water, salt and pepper and mix well.
5. Cover pan with a lid and let cook for 15 minutes or until rice is tender.
6. Next preheat a grill pan and coat with 3 tablespoons of olive oil.
7. Season chicken with salt and pepper and place on the hot grill pan.
8. Let chicken cook for 4 minutes on each side until golden brown.
9. In a separate 3 quart pot bring water to a boil.
10. Place broccoli in the pot for 1 - 2 minutes.
11. Remove broccoli from the pot and place in an ice bath ( ice and water in a bowl)
12. In a frying pan add 2 tablespoons of butter and 2 tablespoons of olive oil and 2 tablespoons of garlic, 2 tablespoons of shallots and mix well.
13. Next take the broccoli out of ice bath and cut into pieces.
14. Place broccoli pieces into the frying and saut� for 2 minutes.
15. Season with a pinch of salt and pepper.
16. Place chicken breasts on serving plate, add the broccoli and scoop a few spoonfuls of brown rice on the plate and enjoy your healthy meal
