Chicken and Broccoli Saute

Ingredients:
  1 tsp   EVOO
  3 cups   chopped broccoli
  2   Carrots, peeled and chopped
  2 tbsp   finely chopped yellow onion
  2   garlic cloves, minced
  4   boneless, skinless chicken breast halves, cut into bite size pieces
  2 tbsp   teriyaki sauce
Directions:
  Heat the oil in a large skillet over medium heat. Add the broccoli, carrots, onion, and garlic, and saute until the vegetables begin to soften.

Add the chicken and 1 tablespoon of the teriyaki sauce. When the chicken begins to brown, add the second tablespoon of sauce. Cooke for an additional 10-15 minutes, or until the chicken is cooked through.

Serve over brown rice.
