Chicken Cacciatore

Chicken with onion, green pepper, tomatoes, white wine. |

chicken thighs |

chicken breast |

1 tblsp |
|
olive oil |
| |

small chopped onion |
| |
1/2 |
|
medium-sized green pepper, sliced thin |

1 clove |
|
small garlic, crushed |
| |
1 can(8 oz) |
|
tomatoes, cut up |

2 tblsp |
|
dry white wine |
| |
1/2 tsp |
|
salt and oregano |

small bay leaf |

ground pepper to taste |
| Directions: |
| |
In skillet, brown chicken in hot oil; push to one side. Add onion, green pepper, and garlic; saute until tender. Add remaining ingredients; bring to boil. cover, then simmer 30 to 40 minutes or until chicken is tender. Discard bay leaf. Makes 2 servings. Good with hot cooked rice.
