Cheesy Chicken Chests

Ingredients:
  1 1/2 lb   boneless chicken breasts
  2   eggs, beaten
  2 c   Italian bread crumbs
  1 Tbls   oil
  1 Tbls   butter
  2 tsp   oregano
  8 oz   mozzarella cheese, grated
  1/4 c   water or chicken broth
Directions:
  Cut chicken into bite size pieces. Marinate overnight or 1 hour in eggs. Coat in bread crumbs. Brown chicken in oil and butter for 5-10 minutes. Place in casserole dish (9x13in or whatever). Sprinkle oregano over chicken. Cover with cheese. Pour over water or chicken broth. Bake 30 minutes at 350 degrees.
