Carrot and Peanut Salad

  Crunchy and refreshing twist to a marinated vegetable salad.
Ingredients:
  4   carrots, coarsely chopped or grated
  1/3 cup   salted peanuts, whole
  2 tbsp   red wine vinegar or white balsamic vinegar
  2 tbsp   peanut or olive oil
  1/2 tsp   dark sesame oil
Directions:
  Combine all ingredients and chill until serving time.
