Bruschetta Chicken

Ingredients: |

Boneless skinless chicken breasts |
|
1/2 C |
|
Flour |
|
1/2 C |
|
Egg |
|
1/4 C |
|
Parmesan cheese |
|
1/4 C |
|
Bread crumbs |
|
1 Tbsp |
|
Butter, melted |
|
2 |
|
Large tomatoes, chopped |
|
3 Tbsp |
|
Fresh minced basil |
|
2 cloves |
|
Garlic |
|
1 Tbsp |
|
Olive oil |
|

Salt and pepper to taste |
Directions: |
|
Dip chicken in flour, then egg.
Place in greased baking dish.
Combine parmesan, bread crumbs, and butter.
Sprinkle on chicken.
Cover dish with foil.
Bake at 375 degrees for 20 minutes.
Uncover and bake for 5-10 minutes.
Combine tomatoes, basil, garlic, olive oil, and salt and pepper.
Spoon tomato mixture over chicken.
Bake 3-5 minutes more.
