Broccoli Chowder

  nice hearty soup with a healthy switch of broccoli and milk add some cheddar for a kick!
Ingredients:
  6 ea   slices bacon
  4 Tbs.   butter
  1 med   onion, chopped
  2 ea   cloves garlic
  1 tsp   celery seed
  4 Tbs   whole wheat flour
  4 c   chicken broth
  4 c   milk
  6 sm   potatoes
  1 hd   broccoli
Directions:
  Cook bacon with the butter in a medium saucepan over low heat until it is cooked, but not crisp. Add the onion and garlice and celery seed and cook until soft. Scatter the flour over the mixture and stir to coat. Gradually add the broth and the milk, whisking until smooth.

Add the potatoes; increase the heat to medium and simmer, covered until slightly softened. Add the broccoli and season with salt. Continue cooking uncovered at a rapid simmer until the veggies are tender. Season according to taste with salt and pepper.


***for a cheesy version add 16 oz of shredded cheddar or cheddar jack cheese, or a pepper jack cheese for a little spice.
