Brazilian Chicken Sliders

  Little white meat chicken burgers with a spicy, citrusy glaze. Great on the grill or fried up in a pan.
Ingredients:
  1   orange, juiced
  1   lime, juiced
  2 tbsp   tomato paste
  1/2 tsp   cumin
  1/2 tsp   italian seasoning
  1 tsp   hot sauce (Choloula)
  1/2 tsp   salt
  1/2 tsp   pepper
  2   garlic cloves
  1 lb   boneless, skinless chicken breast (16-20 oz)
  1/4 cup   chopped green onions
  8   sweet or savory Hawaiian buns
Directions:
  In a small bowl combine the orange juice, lime juice, tomato paste, cumin, Italian seasoning, hot sauce, salt and pepper. Whisk until smooth and divide the sauce into 2 bowls. Place one bowl near the stove or grill for basting and set aside the other for later.

In a food processor, pulse the garlic until minced. Cut the chicken breasts into large cubes and add to the food processor with the green onions. Pulse until coarsely chopped. With wet hands, form the chicken mixture into 8 small patties. Sprinkle the tops of the patties with salt and pepper.

Heat a grill or skillet to medium heat. If using a skillet, add a tablespoon of oil to prevent sticking. Add the patties to the hot pan, salt side down. Season the other side with salt and pepper. Spoon some sauce over each patty. Once the edges are turning white and the bottoms are lightly browned turn the patties over. Spoon some sauce over the cooked side and cook another few minutes until the patties are firm and fully cooked.

Cut the buns in half and serve the sliders immediately with the extra sauce for dipping.
