Boboli Pizza Night

  Make your own super healthy, super powered pizza.
Ingredients:
  1 shell   Boboli 100% Whole Wheat Thin
  1/3 lb.   pre-cooked It. sausage, crumbled
  1 cup   jar marinara sauce
  1/2 cup   orange or green vegetable puree
  2 cups   low-fat moazzarella cheese, shredded
  1.50 cups   frozen stir-fry pepper mix
Directions:
  Preheat oven to 425. Puree together sauce and veggie puree (spinach works great here). Spread sauce on shell. Top with cheese, meat and veggies. Bake for 9 to 11 minutes on middle rack (use pizza round for a softer crust). Slice and serve.

I pre-cook 1 lb. of ground italian sausage then separate into three freezer bags for ready-to-use portions. You may want to only do two portions, but that ups the fat content and calories.

Adjust toppings as desired. We have also used canned mushroom pieces and olive slices.
