as egg replacer use chia or apple sauce with baking powder
Ingredients
3 cups cooked black beans
1 cup regular oats
3 eggs
1/4 c. oil
1/3 cup cocoa powder
1/4 tsp. salt (if using canned beans reduce this to a pinch
1 teaspoon vanilla extract
3/4 cup + 2Tbsp. white sugar or Xylitol
1 teaspoon instant coffee (optional)
3/4 cup semi-sweet chocolate chips

Mix everything except chocolate chips and oats in a food processor until smooth. Stir in chocolate chips and oats, then scrape into an 8x8, greased pan. Bake at 350 for 25 minutes, or until JUST set. Don't overcook, or they will be very dry and crumbly. |
