Black Bean Peach Salsa

  Fresh and fast. Great with chips or over grilled chicken, meats or fish.
Ingredients:
  2   limes
  1/4 cup   cilantro, chopped
  2 tbsp   olive oil
  4 tsp   canned chipotle chilies in adobo sauce, chopped
  1 tbsp   red wine vinegar
  1 tsp   cumin
  2 cans   black beans (15 oz each), rinsed and drained
  2   peaches, ripe, chopped
  1   red onion, small, chopped
  3   tomatoes, medium, chopped
  1   green bell pepper, chopped
Directions:
  Juice the limes and pour into a large bowl. Whisk in the cilantro, oil, chiles, vinegar and cumin. Add everything else and mix well. Salt to taste. Chill before serving if desired.
