Black Bean Peach Salsa

Fresh and fast. Great with chips or over grilled chicken, meats or fish. |
Ingredients: |

limes |
|
1/4 cup |
|
cilantro, chopped |
|
2 tbsp |
|
olive oil |
|
4 tsp |
|
canned chipotle chilies in adobo sauce, chopped |
|
1 tbsp |
|
red wine vinegar |
|
1 tsp |
|
cumin |
|
2 cans |
|
black beans (15 oz each), rinsed and drained |
|
2 |
|
peaches, ripe, chopped |
|
1 |
|
red onion, small, chopped |
|

|
tomatoes, medium, chopped |
|

|
green bell pepper, chopped |
Directions: |
|
Juice the limes and pour into a large bowl. Whisk in the cilantro, oil, chiles, vinegar and cumin. Add everything else and mix well. Salt to taste. Chill before serving if desired.
