serves: 4
  Chicken in crushed pork rind and Parmesan coating
Ingredients:
  4   boneless skinless chicken breast
  1 bag   fried pork rinds
  1 cup   parmesean cheese finely grated
    extra virgin olive oil to coat pan
    season coating mixture to taste
    eggs OR
    ranch dressing OR
    balsamic dressing
Directions:
  Crush pork rinds. put Pork rinds, Parmesan, seasoning in a mixing bowl mix thoroughly with hands.
On a clean and dry dinner plate, use two eggs uncooked and slightly beaten

Dip chicken breast in egg, then coat well in coating mixture

Fry in skillet with olive oil, until chicken is a safe temperature (fully cooked)
