Baked Chicken and Mushrooms |
Ingredients: |

boneless skinless chicken breast halves |
|
1/2 tsp |
|
paprika |
|
1/2 lb |
|
fresh mushrooms, sliced |
|
1/2 cup |
|
sodium free chicken broth |
|
3 |
|
green onions, chopped |
|
1 clove |
|
garlic, minced |
|
1/8 tsp |
|
cayenne pepper |
Directions: |

Arrange chicken in a 13X9X2 in baking dish lightly coated with olive oil. Sprinkle with paprika. Bake, uncovered, at 350 degrees F for 15 minutes.
Meanwhile, in a large nonstick skillet, saute mushrooms in Pam for 5 minutes. Add the chicken broth, green onion, garlic and pepper. bring to a boil. Pour over chicken. Bake 10-15 minutes longer or until chicken juices run clear.
