Bacon Chops with Apple & Cider Sauce

Bacon chops with mashed potatoes |
Ingredients: |

oil |

bacon chops |

2 each |
|
cooking apples, peeled, cored and sliced |
|
1 tsp |
|
butter |
|
2 each |
|
garlic cloves, finely chopped |
|
1 tsp |
|
sugar |
|
2/3 cup |
|
dry cider |
|
1 tsp |
|
cider vinegar |
|
1 tbsp |
|
wholegrain mustard |
|
2 tsp |
|
chopped fresh thyme |
|
|
|
salt and pepper to taste |
|
|
|
sprigs of thyme, to granish |
Directions: |
|
1. Heat the oil in a large heavy frying pan over a medium heat, and cook the chops for 10 minutes, browning well on both sides. Remove the chops from the pan and keep warm.
2. Add the butter and apples to the frying pan and cook until the juices begin to turn brown.
3. Add the garlic and sugar, and cook for 1 minute, then stir in the cider, cider vinegar, mustard and chopped thyme. Boil for a few minutes until reduced to a saucy consistency. Season well.
4. Place the chops on armed serving plates, spoone over the sauce, garinsh with the thyme springs and serve.
