Aloo Mater

  A curried potato dish with classic Indian flavor. A simple vegetarian dish.
Ingredients:
  2 tbsp   extra virgin olive oil
  1 tsp   turmeric
  1 tsp   garam masala
  1 tsp   curry powder
  1/2   lemon, juiced
  3   large potatoes, peeled and diced
  3 cups   frozen peas
  15 oz   diced tomatoes, undrained
Directions:
  In a large skillet, heat oil over med-low heat. Add spices and saute until fragrant. Add lemon juice and potatoes and cook, covered,until potatoes are tender, stirring occasionally, about 30 minutes. Add peas and tomatoes with juice. Cook and stir until hot and well combined. Add salt and pepper to taste.
