Easy Fajitas with Refried Beans and Fruit Sorbet

  A quick, nutritious dinner that'll get your family running for the table as soon as they hear the unmistakable sizzling sound of fajitas!
In addition to the recipes, you will also need the following for this meal:
  1 carton  Fruit Sorbet/Sherbet, your favorite flavor

Easy Fajitas

  An easy recipe quick recipe for fajitas - you can use either steak or chicken. And if you don't have any fajita seasoning on hand, toss in a pinch each of garlic or onion powder, cayenne or chili powder and thyme or oregano plus salt & pepper.
Ingredients:
  3 tsp   oil
  2 lb   steak or chicken cut into strips
  1 pkg   fajita seasoning
  1   green bell pepper
  1   sweet red bell pepper
    sweet yellow bell pepper
  1   onion
  1 pkg   corn or flour tortillas
    salsa (optional)
    guacamole (optional)
    grated cheese (optional)
    sour cream (optional)
    diced tomatoes (optional)
    shredded lettuce (optional)
Directions:
  cut meat or chicken into strips as well as the green/red pepper and onion. Brown meat in 2 tsp oil and add fajita seasoning. saute vegetables in 1 tsp oil.

Combine meat and veggies to the tortilla

top with your favorite garnishes....sour cream guacamole, cheese,tomato, lettuce, or what ever is your favorite
Refried Beans topped with Cheese

  The staple side-dish for Mexican meals: refried beans topped with melted cheese.
Ingredients:
  1 can   refried beans
  1/2 c.   grated Cheddar cheese
Directions:
  Heat refried beans either in the microwave, or on the stovetop. Be sure to keep the beans covered, and stir occasionally to prevent splatters and to heat evenly. When the beans are hot, transfer to a serving dish, top with grated cheese (really, and kind of hard cheese will work), and cover with a lid or dinner plate until cheese melts. You may need to microwave it for another minute to speed along the melting process.
