Bacon-wrapped Maple Salmon and Spinach Salad with Maple Dressing

Bacon Wrapped Salmon

  Sweet and salty salmon that is definitely fancy enough to serve to guests and easy enough that you'll be able to enjoy their company.
Ingredients:
  4   salmon fillets
  8 slices   Bacon
  1/2 c.   maple syrup
  4 T.   soy sauce
Directions:
  Preheat oven to 450.

Season with salt & pepper, wrap filet with bacon, place on roasting pan and roast for 12 mins or until bacon is crisp. In a sm. saucepan simmer syrup and soy sauce, Baste salmon with glaze and cook 1-2 mins longer.
Maple Dressing

  Maple vinaigrette dressing for salad.

Ingredients:
  1 tsp.   Dijon mustard
  2 T.   maple syrup
  2 T.   Balsamic vinegar
  1/4 c.   extra virgin olive oil
    salt and pepper to taste
Directions:
  In a small bowl, whisk together the mustard, maple syrup and balsamic vinegar.
Slowly pour the oil whisking constantly to obtain a smooth mixture.
Add salt and pepper to taste.
Spinach Salad with Maple Dressing

  Spinach Salad with lots of accessories! Serve with Maple Dressing.
Ingredients:
  1 (10 oz.) bag   spinach
  1   apple, diced
  2   clementine organges, peeled and sectioned
  1 T.   lemon juice
  1/4   red onion, thinly sliced
  1/2 lb.   bacon, cooked and crumbled
  1/2 c.   grated smoked Gouda or Cheddar
Directions:
  Wash, drain and remove stems from spinach.
Separate endive leaves, mince and place in a salad bowl with the spinach.
Cut the apple into cubes and toss with lemon juice. Add to the spinach mixture.
Add the clementine sections, onion, bacon, and cheese.
Toss with dressing and serve.
