Beef and Cheddar Bake

This is a great way to use up extra or left over Sloppy Joe Meat! |
| Ingredients: |

1 (1 lb.) bag |
|
frozen mixed vegetables |
| |
3 c. |

Sloppy Joe meat |
| |
2 c. |
|
shredded cheddar cheese |
| |
1 8 oz. box |
|
corn bread mix |
| |
|
|
eggs, milk, and oil, as directed on corn bread mix package |
| Directions: |

Preheat the oven to 350°F. In a mixing bowl, combine the corn bread mix with the eggs, milk and oil as directed on the package, set aside.
In a casserole dish or 9” x 13” baking pan, layer the frozen vegetables (on the bottom), the sloppy joe meat (I wrote 3 c., but I usually use whatever I have on hand, usually 2-4 c.), the shredded cheese, and top with the corn bread batter.
Bake for 35 min @ 350°F, Until toothpick inserted in center of the dish or pan comes out clean.
